If I were to keep the ayon server updated to the latest, but not update the launcher for a long while, would any issues arise?
And, Are there any docs or compatibility lists?

server should be fine, but newer addons may require newer ayon launcher…
it should tell you during bundle creation.

On bundle creation and dev bundles, we have a compatibility checker.
It will be found on the right.
As far as I know, it works based on the info specified in the package.py
which defined in each addon. e.g. applications/package.py
It’s also worth mentioning that these checkers doesn’t check the content of dependency package.
